Yummy Banana & Oat Muffins

This recipe is a hit in my house and the bonus is that it’s so easy to whip up!

This recipe will make 12 medium sized muffins.

Equipment that you will need:

  • 2 mixing bowls
  • A whisk/ hand beater/ stand mixer
  • Measuring cups & spoons
  • Muffin tin
  • Spatula/ Spoon

Ingredients for Muffins:

  • 1 1/2 cups All purpose flour
  • 1 cup rolled oats (not instant oats)
  • 1/2 cup white OR brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup Milk
  • 1/3 cup vegetable oil (no flavored oils)
  • 1/2 teaspoon vanilla extract/essence
  • 1 cup mashed bananas

**Pre-heat your oven to 180°C/356°F

**Grease your muffin tin with non-stick spray or butter

Step 1 – Combine flour, oats, sugar, baking powder, baking soda & salt in a large mixing bowl.

Step 2 – In a separate large mixing bowl, beat/whisk the eggs lightly. Stir in milk, oil & vanilla extract. Add mashed bananas and mix until well combined.

Step 3 – Add dry ingredients into the wet ingredients and mix until just combined (until you can no longer see any dry ingredients). Spoon mixture evenly into your muffin tin.

Step 4 – Bake for 18 – 20 min in a normal oven (not fan forced) Baking times will very depending on your oven, so check the muffins at around 18 minutes with a toothpick inserted into the middle and if it comes out clean then they are done, but if it comes out with batter on the toothpick, continue to bake for another 2 minutes and check again. Keep checking until they are done!

Step 5 – Once out of the oven, let them cool for a few minutes and then transfer to a wire rack to cool completely! Resist eating them all while still warm! Enjoy!!
